I love it! After my disappointment over cheddar Teese (the last hyped melty vegan cheese), I was skeptical of the Daiya hype, to say the least. So I didn’t order any online, instead waiting for it to hit Food Fight!—where it flew off the shelves. I didn’t score the mozzarella, but I did manage to get my grubby little hands on the cheddar. When I was checking out, the Food Fight! guy and I discussed the suckiness of Teese cheddar, and he said he’d been eating Daiya quesadillas all week. Confidence boosted a bit.
And as you can see in the photo, we have a melty yet stretchy grilled cheese sandwich (on homemade bread, yo). The salt and tang are there, and it’s got a great consistency. I’m more than a little ashamed—yet oddly compelled to share—that the first thing I thought of was that the mozzarella would probably bread and fry up pretty well in stick form. And of course pizza, but that’s not as embarrasing.
Here’s the packaging as of now, as seen through a fuzzy, don’t-know-where-to-focus lens. Food Fight! said they’re working to get it repackaged, to avoid these clamshells. And they’re also going to try having at least shreds consistently available quicklike. If, fill-in-the-blank forbid, you don’t live in Portland, check Daiya’s website (link above), where they list availability, and order online if you’ve gotta. It’s worth a try. You don’t have to trust me (never a big cheese eater), but trust Tom. He’s had this stuff hot and cold and is pretty dern impressed.
