Well, that’s how Whole Foods spells it. And a lot of other people too. I’ve seen it as tabouli too, and I prefer it. So from here on out, that’s how I’m spelling it. Tabouli. Yeah.

I can’t believe I’ve never tried this mess of a mess before. I picked up some for lunch and instantly fell in love. It’s filling but light. Tart but well-grounded.

This is all it is: fine bulgur, cucumbers, tomato, parsley, mint, lemon juice, oil, salt, and pepper. I can do that. I’ll probably put a bunch more cucumber and tomato in mine…and use flat-leaf parsley because it tastes better than the curly stuff.

I could easily make a batch and have a week’s worth of lunches ready to go. Beats running out for a V-8 and some chips.
